Ingredients
  

  • 2 cups cottage cheese
  • 4 eggs
  • 1/3 cup real maple syrup or raw honey
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1 cup blueberries fresh or frozen
  • butter or coconut oil for greasing the pan

Instructions
 

  • Preheat the oven to 350. Lightly grease a 9 x 13 pan with coconut oil or butter.
  • In a mixing bowl, combine all of the breakfast bake ingredients except for the blueberries. Stir until fully combined.
  • Pour the batter into the prepared pan. Sprinkle the blueberries evenly across the top.
  • Bake the cottage cheese bake for 30-35 minutes or until the top is turning golden brown and it is cooked all of the way through.
  • Cool slightly and serve!
