Chewy Fresh Milled Spelt Chocolate Chip Cookies
These chewy chocolate chip cookies are made with fresh milled spelt flour, and are completely irresistible! They are a healthier alternative to a traditional chocolate chip cookie with nutrients from freshly milled ancient grains.

Dry Ingredients
- 1 1/2 cups fresh milled spelt flour approximately 1 cup of spelt berries
- 1/2 tsp baking soda
- 1/2 tsp unrefined salt
Brown Sugar
- 1 cup organic cane sugar
- 1 tbsp molasses alternatively, use store-bought light brown sugar
Wet Ingredients
- 1/2 cup grass-fed butter
- 1 whole egg
- 2 egg yolks
- 1 tsp vanilla extract
- 6 oz dark chocolate chips
- flaky sea salt for topping optional
Prepare Dry Ingredients
Mill the spelt berries to make 1 1/2 cups of flour
Combine the spelt flour, baking soda, and salt in a medium mixing bowl.
Prepare Wet Ingredients
In a small saucepan, melt the butter over medium-low heat.
While the butter melts, make the brown sugar by combining the cane sugar with the molasses until there are no clumps and the brown sugar is light and fluffy.
Make the Cookie Dough
In the bowl of your stand mixer (or a large mixing bowl, if mixing by hand), combine the melted butter and brown sugar.
Add the egg and egg yolks and mix until combined. Add the vanilla extract.
Gradually add the dry ingredients and mix until just combined.
Gently fold in the chocolate chips.
Cover the cookie dough with plastic wrap or a tea towel, and refrigerate for 2-3 hours.
Bake the Cookies
When you are ready to bake cookies, preheat the oven to 375.
Line a baking sheet with unbleached parchment paper.
Using a cookie scoop or your hands, roll the cookie dough into even balls, approximately 3 tbsp in size. Make sure to space your cookies because they will spread when baking.
Bake the cookies for 10-12 minutes, or until the edges are turning golden brown but the middles are still soft.
Remove the cookies from the oven, and tap the baking sheet lightly to flatten the cookies a bit. Sprinkle with flaky sea salt.
