Creamy Cottage Cheese Eggs

Creamy cottage cheese eggs will quickly become your new favorite breakfast. They are easy to make, irresistibly cheesy and high in protein!

Equipment

  • 1 Non-stick pan
  • 1 Silicone spatula

Ingredients
  

  • 2-3 Eggs whole eggs
  • 1/2 Cup Cottage Cheese Small curd
  • Salt & Pepper
  • 1 Tb Butter or cooking oil

Instructions
 

  • Heat a nonstick pan over medium heat
  • Once the pan is warm, add your butter or other oil to the pan.
  • Crack 2-3 eggs into the center of the pan.
  • Sprinkle the eggs with a little bit of salt and pepper.
  • Cook the eggs just like you would if you were making scrambled eggs. Stir them gently with a silicone spatula as they cook.
  • When the eggs are just about cooked all the way (about 90% done), add 1/2 cup of cottage cheese into the pan. Stir everything together.
  • Continue to cook the eggs. The cottage cheese will begin to simmer, and the mixture will continue to thicken as it cooks.
  • Stir occasionally until the eggs are thick and creamy.
  • Remove from the pan, serve and enjoy!
