Preheat oven to 300
Line a large baking sheet with parchment paper.
In a large bowl, mix together oats, nuts, cinnamon, salt and cardamom (if using)
Melt the coconut oil, using either a small saucepan on the stove top, or in a glass measuring cup in the microwave.
Whisk the maple syrup in with the coconut oil, then add the vanilla extract
Pour the wet ingredients over the oats mixture, and stir to combine
Spread the granola out over the lined baking sheet in an even layer
Cook for 45 minutes, stirring every 15 minutes**
Once it’s done cooking, take it out of the oven and allow it to cool completely. This is where the granola really develops that nice crunch!
Once the granola is completely cool, move to an airtight container to store. I like to store mine in a gallon ziplock bag, but you could also do a large glass mason jar or other container.
