Equipment

  • 1 Large Mixing Bowl
  • 1 Mixing Spoon
  • 1 Glass measuring cup
  • Parchment Paper
  • 1 Large Baking Sheet

Ingredients

  • 5 Cups Old Fashioned Oats
  • 2-3 Cups Nuts or Seeds My favorites are Sliced Almonds + Pecans
  • 1 TB Cinnamon Add more here if you like cinnamon, I like to measure with my heart and use closer to 2 TB
  • 2 tsp Cardamom
  • 3/4 Cup Melted Coconut Oil
  • 1 Cup Pure Maple Syrup
  • 2 TB Vanilla Extract Alot I know, just trust me
  • 1 Tsp Salt

Instructions

  • Preheat oven to 300
  • Line a large baking sheet with parchment paper.
  • In a large bowl, mix together oats, nuts, cinnamon, salt and cardamom (if using)
  • Melt the coconut oil, using either a small saucepan on the stove top, or in a glass measuring cup in the microwave.
  • Whisk the maple syrup in with the coconut oil, then add the vanilla extract
  • Pour the wet ingredients over the oats mixture, and stir to combine
  • Spread the granola out over the lined baking sheet in an even layer
  • Cook for 45 minutes, stirring every 15 minutes**
  • Once it’s done cooking, take it out of the oven and allow it to cool completely. This is where the granola really develops that nice crunch!
  • Once the granola is completely cool, move to an airtight container to store. I like to store mine in a gallon ziplock bag, but you could also do a large glass mason jar or other container.

Notes

**The last 15 minutes can vary depending on how crispy you want your granola to be. Sometimes I take it out at 10, and others I let it go the full 15. It might depend on your oven and specific ingredients.
Store in an airtight container for up to 3 weeks. You can also freeze it for up to 3 months!
