This hearty & healthy cabbage soup recipe has flavorful ground beef, colorful vegetables, brown rice, and nourishing bone broth for the perfect cold weather soup. It is perfectly filling and has really good flavor! Add it into your soup rotation this fall & winter!
1smallgreen cabbageor 1/2 or a large green cabbage, chopped. About 5-6 cups
4cupsbone brothor beef broth
16ozcrushed tomatoes
1/2cupbrown riceuncooked
1tbspraw honey
Instructions
On the stove top over medium heat, heat a large soup pot.
When it is hot, add a little bit of olive oil or butter to the pot. Add the ground beef and cook, breaking it apart as it browns. Season with salt and pepper.
Add the minced garlic and cook for a few minutes until fragrant.
Stir in the onion, carrots, bell pepper and thyme and cook for a few minutes until the veggies start to soften slightly.
Add the remaining soup ingredients: broth, cabbage, crushed tomatoes, brown rice and honey. Stir to combine.
Bring the soup to a boil, and then reduce to a simmer for 35-40 minutes or until the rice is cooked and the cabbage is tender.
Serve the soup hot with your favorite sides!
Notes
If you don't have fresh thyme, you can substitute with dried thyme.
