Hearty Beef And Cabbage Soup Recipe

This hearty & healthy cabbage soup recipe has flavorful ground beefcolorful vegetablesbrown rice, and nourishing bone broth for the perfect cold weather soup. It is perfectly filling and has really good flavor! Add it into your soup rotation this fall & winter!

Ingredients
  

  • olive oil or butter
  • 1 1/2 lbs grass-fed ground beef
  • salt & pepper to taste
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 2 medium carrots sliced
  • 1 red bell pepper seeded and chopped
  • 3-4 spears fresh thyme stems removed
  • 1 small green cabbage or 1/2 or a large green cabbage, chopped. About 5-6 cups
  • 4 cups bone broth or beef broth
  • 16 oz crushed tomatoes
  • 1/2 cup brown rice uncooked
  • 1 tbsp raw honey

Instructions
 

  • On the stove top over medium heat, heat a large soup pot.
  • When it is hot, add a little bit of olive oil or butter to the pot. Add the ground beef and cook, breaking it apart as it browns. Season with salt and pepper.
  • Add the minced garlic and cook for a few minutes until fragrant.
  • Stir in the onion, carrots, bell pepper and thyme and cook for a few minutes until the veggies start to soften slightly.
  • Add the remaining soup ingredients: broth, cabbage, crushed tomatoes, brown rice and honey. Stir to combine.
  • Bring the soup to a boil, and then reduce to a simmer for 35-40 minutes or until the rice is cooked and the cabbage is tender.
  • Serve the soup hot with your favorite sides!

Notes

If you don't have fresh thyme, you can substitute with dried thyme.
