Simple & Healthy Snack “Cookies” Recipe

These snack cookies taste like a sweet treat but are made with wholesome ingredients and no added sugar! Make them in bulk and pull them out for a healthy snack that the whole family will love.

Equipment

  • 1 Large Mixing Bowl
  • 1 Baking Sheet
  • Parchment Paper

Ingredients
  

  • 2 ripe bananas
  • 2 cups old-fashioned oats
  • 1 tsp cinnamon
  • 1/4 tsp unrefined salt
  • 1/2 cup creamy peanut butter natural
  • 1/2 tsp vanilla extract
  • 1/4 cup dark chocolate chips

Instructions
 

  • Preheat the oven to 350, and line a large baking sheet with parchment paper.
  • In a large mixing bowl, mash the bananas.
  • Add the remaining cookie ingredients, and mix everything together really well.
  • Scoop some of the cookie mixture using a spoon, and gently roll it into a ball between your palms.
  • Add the cookie ball to the parchment paper lined baking sheet, and press it slightly until it form a flat cookie shape.
  • Repeat with the remaining cookie "dough" until you have fit as many cookies as you can on the baking sheet. These do not expand as they cook, but give them a little space to cook evenly.
  • Bake the cookies for 14-17 minutes, or until they start to turn brown on the edges.
  • Remove the cookies from the oven and allow them to cool completely on a wire cooling rack.
