Simple & Healthy Snack “Cookies” Recipe
These snack cookies taste like a sweet treat but are made with wholesome ingredients and no added sugar! Make them in bulk and pull them out for a healthy snack that the whole family will love.

- 2 ripe bananas
- 2 cups old-fashioned oats
- 1 tsp cinnamon
- 1/4 tsp unrefined salt
- 1/2 cup creamy peanut butter natural
- 1/2 tsp vanilla extract
- 1/4 cup dark chocolate chips
Preheat the oven to 350, and line a large baking sheet with parchment paper.
In a large mixing bowl, mash the bananas.
Add the remaining cookie ingredients, and mix everything together really well.
Scoop some of the cookie mixture using a spoon, and gently roll it into a ball between your palms.
Add the cookie ball to the parchment paper lined baking sheet, and press it slightly until it form a flat cookie shape.
Repeat with the remaining cookie "dough" until you have fit as many cookies as you can on the baking sheet. These do not expand as they cook, but give them a little space to cook evenly.
Bake the cookies for 14-17 minutes, or until they start to turn brown on the edges.
Remove the cookies from the oven and allow them to cool completely on a wire cooling rack.
