1 Large glass bowl
1 Mixing Spoon
1 Muffin tin
12 Paper muffin liners
- 1/2 cup grass-fed butter melted
- 2 apples finely diced, about 2 cups
- 1/2 cup raw honey
- 1 pastured egg
- 1/2 tsp baking soda
- 1 cup flour whole wheat or all-purpose
- 1 cup organic rolled oats
- 2 tbsp cinnamon
Preheat the oven to 350, and line a muffin tin with paper liners. This recipe makes 12 muffins!
Peel and dice the apples, and melt the butter.
Combine all ingredients in a large bowl. Mix until just combined. The batter will be thick, that’s ok!
Spoon batter into the prepared muffin tin, evenly distributing it. Optionally, sprinkle a little more cinnamon on the tops of the muffins.
Bake muffins for 15-20 minutes, or until a toothpick inserted into the middle comes out clean.
Allow the muffins to cool completely on a cooling wire rack. Enjoy with butter, or peanut butter for a more filling snack.
