Ingredients for Healthy Apple Oatmeal Muffins

This healthy apple muffins recipe is really simple and comes together quickly! Chances are you already have most of these wholesome ingredients in your pantry ready to go.

1/2 cup grass-fed butter, melted – Grass-fed butter is always my preference, because it blows regular butter out of the water from a nutritional standpoint. It is one of best sources of absorbable vitamin A available to us! If you don’t have grass-fed butter, regular butter will work just fine. Coconut oil is also delicious in this recipe.

1/2 cup raw honey – Although baking the honey will kill the beneficial enzymes, real raw honey is still the best option because often times honey you purchase at the store is diluted, has added sugar, or artificial colors. You could also substitute pure maple syrup.

1 pastured egg

1/2 tsp baking soda

1 cup flour – whole wheat is my preference because it has more nutrients, but all-purpose will work great as well.

1 cup organic oats – Organic oatmeal from a reliable source will ensure that the oats were not grown with glyphosate (a dangerous chemical also known as round-up).

2 organic fresh apples, peeled and finely diced (about 2 cups) – The apple flavor is the best part of these muffins. Any kind of apples would be delicious in this recipe, although for best results, use a firmer apple. Granny smith, or honeycrisp apples are my favorite choices, but use whatever you have. Experiment with different types of apples to see which one is your favorite!

2 tbs cinnamon – I always measure cinnamon with my heart, so just dump in however much feels good.

How To Store Cinnamon Apple Muffins

My favorite way to enjoy these apple muffins is warm with butter. But they are also great to make ahead for the week! They will keep at room temperature in an airtight. container for up to 5 days. Or, you can freeze them in a food safe ziplock bag for up to 3 months. To reheat, leave in the fridge overnight or microwave them individually wrapped in a paper towel to hold in moisture.

Common Questions and Substitutions

Can I use oil instead of butter? You certainly can, although I would recommend coconut oil, rather than a highly processed vegetable oil .

Can I use flax eggs? Yes, if you can’t consume eggs flax eggs will work in this recipe.

Can I make these muffins gluten-free? Yes! To make these muffins gluten free, you can blend two cups of oats into oat flour.

Swap the Sweetener. These muffins would be just as delicious with real maple syrup, or coconut sugar. If you use coconut sugar, use about 3/4 cup.

Optional Add-ins / Variations

You can also mix ins like pecans, walnuts, chocolate chips or raisins. Another good variation would be to sprinkle coarse sugar like coconut sugar or cane sugar on top of the muffins for a sweeter finish.
