Nourishing Oatmeal Waffles

This healthy oatmeal waffle recipe is a quick, delicious breakfast that can easily be made gluten free. With no refined sugar, and plenty of protein you will love these waffles!

Equipment

  • 1 Waffle Iron
  • 1 High Speed Blender or food processor
  • 1 Silicon Brush optional, for greasing waffle iron

Ingredients
  

  • 1 3/4 cup old-fashion oats
  • 1 cup milk
  • 2 eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup real maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch salt

Instructions
 

  • Heat your waffle maker.
  • Combine all ingredients in the base of your blender. Blend on high until you have a smooth batter.
  • For best results, let the batter rest for 10 minutes while your waffle iron heats up. This allows the oats to soak up the liquid and make your waffles the perfect texture.
  • Brush your waffle maker with a little bit of melted coconut oil to prevent sticking
  • Pour roughly half of the batter onto the waffle iron.
  • Cook the waffle until it is cooked through and golden brown.
  • When the waffle is done cooking, carefully remove and repeat with remaining batter.
  • Add your favorite topping and enjoy!

Notes

If you don’t have a blender, you could use a food processor. If you don’t have either of them, just mix all the ingredients together really well. The waffles will be a different texture but still delicious!
When heating your waffle iron, if you have options aim for a lower temperature. Mine has a scale of 1-5 and 2 is perfect.
