Greek Yogurt Muffins Made With Fresh Milled Flour

These fresh milled flour muffins are made with greek yogurt and are the perfect healthy snack. The yogurt adds protein and a great texture, plus you get extra fiber and nutrients from truly fresh whole grains. They are so incredibly easy to mix up, you will find yourself making extra to stock the freezer! Customize them with your favorite mix ins, like chocolate chips, dried fruit, or nuts. These light, fluffy muffins will be a family favorite!

Reasons To Love Greek Yogurt Muffins With Fresh Milled Flour

A Healthier Snack – My kids love these muffins, and I can feel good about giving it to them too. Muffins or similar packaged snacks you might find at the grocery store tend to have lots of sugar, preservatives, and seed oils. These muffins have none of those ingredients, just real whole foods and no refined sugar. 

Fresh Milled Flour = More Nutrients – Ever since I learned about the benefits of fresh milled flour, I’ve been on such a FMF kick! Did you know that flour starts to lose it’s nutrients 24 hours after being milled? Once the wheat berry is cracked and exposed to oxygen, the flour starts to lose essential nutrients. After 3 days of being milled, flour will have lost about 90% of it’s original nutrients! Baking with flour right after you mill it “locks in” the nutrients, so you can know that these muffins are nutrient dense. Stock Up Your Freezer – These muffins freeze really well. My favorite way to make them is in a double or triple batch, so that I can put several in the freezer and pull them out as needed. You can thaw them by setting them out at room temperature, or by microwaving them for about 30 seconds.

Ingredients for Fresh Milled Flour Muffins

You only need a few, simple ingredients for this great recipe. 

Soft White Wheat Berries – Soft white is one of my favorites for baking things like muffins.  If you don’t have a grain mill or high powered blender, you can look for fresh-milled flour at a local bakery or health food store. Keep in mind though, that you may not know when the flour was milled. If it has been sitting on the shelf for more than 24 hours, it won’t have all of those nutrients. 

You can also experiment with different wheat varieties. I think fresh kamut flour or another ancient grain would be delicious! 

Real maple syrup (or raw honey) – These two sweeteners are my absolute favorite way to sweeten anything without using refined sugar. Either one works great in this muffin recipe. 

Greek yogurt – preferably full fat, for the best texture. 

Melted coconut oil – Another amazing ingredient to use as a fat when cooking. Coconut oil has health benefits for your skin, joints, brain, and heart! 

Whole Eggs – pasture raised for the best nutrients and quality.

Whole milk – I always have raw milk on hand, but you can use what you drink. 

Baking Powder

Baking Soda

Salt – My favorite is redmonds real salt

Vanilla extract

Optional mix-ins, like chocolate chips, nuts, or dried fruit. 

Other Tools To Have On Hand

  • Wheat mill or grinder – If you want to grind your own flour, you will need to have a machine to do it for you. Some high powered blenders can also work, although they may not grind the wheat berry quite as finely as a grain mill. 
  • Measuring cups and spoons
  • Muffin tin
  • Paper liners (or extra oil)
  • Two large mixing bowls

How To Make Greek Yogurt Muffins With Fresh Milled Flour

Step 1: First you are going to get everything ready. Preheat the oven to 350, and prepare a muffin tin by lining it with paper liners. Alternatively, you can grease your muffin tin with coconut oil or butter. 

Step 2: Mill your wheat berries using a grain mill or a high powered blender.

Step 3: Combine all dry ingredients in a large mixing bowl: fresh milled flour, baking powder, baking soda, and salt.

Step 4: In a separate bowl, mix together melted coconut oil, honey or maple syrup, greek yogurt, eggs, vanilla and milk. Whisk together until well combined.

Step 5: Gradually add the dry mixture to the wet ingredients while stirring. Mix until just combined! 

Step 6: If you are adding any mix-ins, gently add them now. 

Step 7: Divide the muffin batter evenly into your prepared muffin tin. This recipe should make 12 muffins, and each cup should be about 3/4 full. 

Step 8: Bake the muffins for 18-22 minutes, or until they are golden brown and cooked all the way through. You can test if they are done by inserting a toothpick or fork into the middle – if it comes out clean, they are done! 

Step 9: After the muffins cool for a few minutes, you can remove them to a wire cooling rack. Let them cool and enjoy!

Equipment

  • 1 Grain mill or high powered blender
  • measuring cups and spoons
  • 1 Muffin tin
  • 12 Paper muffin liners or oil to grease muffin pan
  • 2 Large mixing bowls

Ingredients
  

  • 1 3/4 cup freshly milled soft white wheat flour approximately 1 1/2 cups wheat berries
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp unrefined salt
  • 1/2 cup real maple syrup or raw honey
  • 1/2 cup greek yogurt preferably full fat
  • 1/3 cup melted coconut oil
  • 2 eggs pasture raised
  • 1/2 cup whole milk
  • 1 tbsp vanilla extract
  • 3/4 cup optional mix-ins chocolate chips, dried fruit, or nuts

Instructions
 

  • Preheat the oven to 350, and line a muffin tin with paper liners. If you don't have paper liners, you can grease the muffin tin with coconut oil or butter.
  • If you are starting with wheat berries, grind them into flour on your mill's finest setting. Or, use a high powered blender to grind the berries.

Dry Ingredients

  • In a large bowl, combine the flour, baking powder, baking soda, and salt. Whisk together to combine.

Wet Ingredients

  • In a separate bowl, combine the melted coconut oil, greek yogurt, eggs, maple syrup/honey, vanilla, and milk.

Combine & Bake

  • Gradually add the dry ingredients to the wet ingredients, and stir until just combined.
  • If you are using any mix-ins, add them to the rest of the muffin batter.
  • Pour the muffin batter into your prepared muffin tin, evenly distributing. This recipe makes 12 muffins. Each muffin cup should be about 3/4 full.
  • Bake the muffins for 18-22 minutes, or until a toothpick inserted into the middle comes out clean.
  • Let the muffins cool on a wire baking rack and enjoy!

How To Store Fresh Milled Flour Muffins

These muffins keep well in an airtight container for a few days. Or, they are great to store in the freezer for up to three months. To freeze, let the muffins cool completely, and store them in a freezer safe container.
