This easy soup recipe is made from simple ingredients that are cooked slowly together for amazing flavor!

Grass-fed beef – I always prefer to use grass-fed beef in my recipes! When cows are fed grass from start to finish, the end product is much higher in important nutrients like Omega-3s, Glutathione, CLA, Vitamins A, D, E, K, B1 and B2, and minerals like calcium, magnesium, zinc, and iron (source). Grass-fed beef gives this soup a rich, savory flavor while adding high-quality protein and nutrients.

Veggies: Onion, carrots, garlic, fresh cabbage, bell pepper, and crushed tomatoes. All of these veggies give the soup texture, so much flavor, and great nutritional value. 

Fresh Thyme: Fresh herbs really make this soup taste amazing. One of my favorite things is to harvest fresh herbs from my garden (when in season) and sprinkle them in a pot of soup. If you don’t have fresh, dried thyme will also work! 

Brown Rice – Another ingredient that I always try and buy organic, to avoid pesticides an excess processing. Brown rice adds texture and makes this soup even more hearty. 

Bone broth (or beef broth) – Bone broth gives this soup incredible depth of flavor while adding collagen, minerals, and nutrients that support joint and gut health. I love making my own bone broth to use in soup recipes.

Other Supplies You Will Need

How To Make Hearty Beef & Cabbage Soup

This soup is really easy to make, but does take some cooking time to soften the rice and veggies. 

Step 1: Heat a large pot over medium heat. While the pot is heating up, prepare all of the veggies by slicing the carrots, chopping the bell pepper & onion, and mincing the garlic. Chop the cabbage into small pieces. 

Step 2: Once the pot is hot, add a little bit of butter or olive oil to the pan. Add the beef to the pan and cook it, breaking it apart as it browns. Season with salt and pepper.

Step 3: Add the onion, minced garlic, carrots, pepper, and fresh thyme to the ground beef. Stir them together and cook for a few more minutes until the veggies start to soften. 

Step 4: Add the remaining soup ingredients to the pot, and mix everything together. 

Step 5: Bring the soup to a boil, reduce the heat and simmer for 35 – 40 minutes or until the rice is done and the cabbage is tender. 

Step 6: Enjoy the soup hot with your favorite sides! 

Store leftover soup in an airtight container in the fridge for a few days. You can also freeze it in a freezer safe container. 

Variations & Substitutions

This delicious soup is so easy to customize based on what you have in your fridge. Feel free to throw in any extra veggies you have on hand, or try substituting wild rice, or quinoa. It would be delicious with beans, too!

What To Serve With Hearty Beef & Cabbage Soup

I love to serve this soup with some bread on the side. I’ve enjoyed it lately with my fresh milled dinner rolls, or it’s always good with a piece of fresh baked crusty sourdough bread. Soup with bread and lots of butter is a complete meal, if you ask me!

This soup is decently thick from all of the veggies, but if you prefer an even thicker soup, you can simmer it uncovered for the last 15–20 minutes to let some of the liquid reduce. Another option is to mash a few of the cooked vegetables right in the pot.

Yes! This soup tastes even better the next day as the flavors have time to meld together. Store it in the fridge for up to 4 days or freeze for longer storage.

It does! Let the soup cool completely before transferring it to freezer-safe containers. Leave a little room for expansion, then freeze for up to 3 months. Thaw in the fridge overnight and reheat on the stove.

Definitely. Just brown your beef and onions first for extra flavor, then add everything to your slow cooker and cook on low for about 6–8 hours, or until the beef is tender.

My preference is brown rice because it holds up really well and adds a nice texture, but you can use white rice if that’s what you have — just shorten the cooking time a bit so it doesn’t get mushy. Wild rice would also be really good but you might need to cook it just a bit longer.

Of course. This soup is just as good without rice if you want a lower-carb option. You could also stir in cooked barley or quinoa.

Ingredients
  

  • olive oil or butter
  • 1 1/2 lbs grass-fed ground beef
  • salt & pepper to taste
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 2 medium carrots sliced
  • 1 red bell pepper seeded and chopped
  • 3-4 spears fresh thyme stems removed
  • 1 small green cabbage or 1/2 or a large green cabbage, chopped. About 5-6 cups
  • 4 cups bone broth or beef broth
  • 16 oz crushed tomatoes
  • 1/2 cup brown rice uncooked
  • 1 tbsp raw honey

Instructions
 

  • On the stove top over medium heat, heat a large soup pot.
  • When it is hot, add a little bit of olive oil or butter to the pot. Add the ground beef and cook, breaking it apart as it browns. Season with salt and pepper.
  • Add the minced garlic and cook for a few minutes until fragrant.
  • Stir in the onion, carrots, bell pepper and thyme and cook for a few minutes until the veggies start to soften slightly.
  • Add the remaining soup ingredients: broth, cabbage, crushed tomatoes, brown rice and honey. Stir to combine.
  • Bring the soup to a boil, and then reduce to a simmer for 35-40 minutes or until the rice is cooked and the cabbage is tender.
  • Serve the soup hot with your favorite sides!

Notes

If you don’t have fresh thyme, you can substitute with dried thyme.
