For this easy recipe, just combine everything in a bowl and cook your waffles right away for a quick, healthy breakfast the whole family will love! These waffles have the perfect texture – they are oh so fluffy on the inside and nice and crispy on the outside.

A great way to use up sourdough discard – if you are overflowing with discard and need recipes to use it up with, this one is perfect! It uses an entire cup of sourdough discard. 

A big batch – This recipe makes 12 squares, so you may have plenty left over to freeze and reheat in the toaster oven for an easy breakfast, even on busy mornings. You could even make a double batch if you have lot of excess sourdough starter and want plenty of waffles in the freezer. 

A no-wait recipe – So many sourdough recipes require you to start the night before, not this one! These no wait sourdough discard waffles can be made right away. 

A healthier take on waffles – this recipe uses sourdough discard, whole wheat flour, and is slightly sweetened with honey. No junk ingredients, just real nourishing ones that you can feel good about! 

The perfect waffle texture: Crispy on the outside, and fluffy on the inside. These crispy waffles hold their shape, have the perfect crunch, but are so soft and fluffy.

Ingredients in Sourdough Discard Waffles

For this easy sourdough waffle recipe you will need just a few simple ingredients:

Sourdough discard: This is unfed sourdough starter that is usually removed before feeding. If you are new to sourdough, starters need regular feedings of flour and water to stay active and healthy, and discarding some of the starter helps maintain the right balance and also to not have way too much. Instead of throwing it away, you can use sourdough discard in so many recipes! Some of my favorite ways to use sourdough discard is in tortillas, pizza, and graham crackers

Milk: I use raw, whole milk in this recipe, but you can use whatever you drink.

Butter (melted): My favorite butter is grass-fed irish butter. Grass-fed butter has so many great health benefits! 

Eggs: Whole, pastured eggs 

Vanilla Extract

Whole wheat flour: I’ve been on a fresh milled flour kick, so I used freshly milled soft white wheat. You can use any whole wheat flour that you have, or all-purpose flour would work fine too. 

Baking Powder: Helps to create that thick, fluffy waffle we are after 

Salt: My favorite is always redmonds real salt

Honey: I love raw honey for the health benefits, so that’s what I keep on hand. 

Coconut oil or cooking spray for preventing sticking

  • Measuring cups & spoons

How To Make Sourdough Discard Waffles

These waffles are super simple to whip up. They only take a few minutes, the perfect quick breakfast! 

Preheat your waffle iron while you mix up your waffle batter. 

First you will combine all of your wet ingredients. Melt the butter, and combine the sourdough starter discard, melted butter, and milk in a large bowl. Next add the eggs, vanilla extract and honey, and mix everything together. 

Next add in the dry ingredients: flour, baking powder, and salt. Mix until just combined, a few clumps are ok.

Use coconut oil to grease your waffle iron to prevent sticking. Add the batter to the hot waffle iron and cook according to your waffle iron – the amount of batter and cook time will vary based on your waffle iron. The waffles should be nice and crispy golden brown, and cooked all the way through.

Topping Ideas & Variations For Sourdough Waffles

These waffles are the perfect vehicle for all of your favorite toppings. Try:

  • Classic maple syrup & butter
  • Fresh fruit
  • Homemade granola 
  • Peanut butter

These waffles are also easy to customize. You could make chocolate chip waffles, or fruity waffles by adding in fresh berries to the waffle batter before cooking. 

How To Store Leftover Waffles

This waffle recipe makes a large batch. To store leftovers, keep them in an airtight container in the fridge for a few days. For longer storage, flash freeze your waffles on a baking sheet, and then store the frozen waffles in a freezer safe container for a few months. To reheat, use a toaster oven for best results (the waffles will stay crispy, rather than getting soggy).

  • 1 Large glass mixing bowl

Ingredients
  

  • 1 cup sourdough starter discard
  • 4 tbsp melted butter
  • 2 cups whole milk or use whatever you drink
  • 2 eggs
  • 2 tbsp raw honey
  • 2 cups whole wheat flour i used freshly milled soft white
  • 1 tbsp baking powder
  • 1 tsp salt
  • coconut oil or similar for greasing waffle iron

Instructions
 

  • Plug in your waffle iron so it can preheat while you mix the batter.

Wet Ingredients

  • Combine melted butter, sourdough discard, and milk in a large bowl. Mix everything together until well combined.
  • Add the eggs and honey and mix

Add Dry Ingredients

  • Add the flour, baking powder, and salt to the wet ingredients.
  • Mix everything together until just combined. A few small clumps are ok.

Cook Waffles

  • Once your waffle iron is hot, brush it with a little bit of coconut oil to prevent the waffles from sticking.
  • Scoop some waffle batter onto the waffle iron, and cook according to your waffle maker. The amount will vary based on what you have.
  • Cook the waffle until it is golden brown and cooked all the way through.
  • Repeat until you have used all of your batter. Stir occasionally to make sure the batter doesn't separate.
  • Enjoy your waffles hot with your favorite toppings!
