Simple & Healthy Snack “Cookies” Recipe
I started making these healthy snack cookies for my kids recently, and they are hooked! For some reason if you call it a cookie, it just seems to taste better, have you noticed? Or maybe it just feels like a sweet treat. Either way, you can’t go wrong with these snack cookies because they come together in just a few minutes in one bowl, and they have no added sugar. The whole family is sure to love these tasty cookies!

Ingredients in Healthy Snack Cookies
You will only need a few healthy ingredients for this recipe that you probably already have in your kitchen!
Old-Fashioned Oats (quick oats will work also) – I always try and buy organic oatmeal to avoid glyphosate and any other pesticides.
Ripe Bananas – the riper the bananas, the sweeter the cookies will be.
Natural peanut butter – peanut butter should just have 1-2 ingredients (peanuts and possibly salt). Watch out for seed oils, sugar, and other unnecessary ingredients.
Cinnamon – My favorite cinnamon to use in all of my recipes is organic ceylon cinnamon. I order mine in bulk from Azure standard!
Salt – Unrefined salt is the best, I like to buy redmonds real salt.

Other Tools You Will Need
This is a great recipe because you don’t need much to make it. You will need:
- Large mixing bowl
- Large baking sheet or cookie sheet
- parchment paper

How To Make Healthy Snack Cookies
This recipe is so straight forward! Really you just mix everything together and then bake it.
Step 1: Preheat the oven to 350
Step 2: Line a large baking sheet or cookie sheet with parchment paper.
Step 3: Mash the bananas in a large bowl, and then add the rest of the cookie ingredients. Stir everything together to combine really well.

Step 4: Scoop some cookie mixture with a spoon or cookie scoop and gently roll it into a ball with your hands. Place it on the parchment paper and flatten it into a “cookie” shape. These cookies will not expand in the oven, they will come out just like you put them in the oven. You can also use a cookie cutter if you prefer a perfect shape.
Step 5: Bake cookies for 14-17 minutes until they start to turn brown on the edges.
Step 6: Remove the cookies from the oven and move them to a wire cooling rack. These cookies hold their shape best if you allow them to cool completely.

Storing Snack Cookies
My preferred method for storing these cookies is to keep them in the freezer! They are so easy to pull out and can be eaten cold. Another thing that I think makes these cookies the perfect snack – you can stock up but they are still ready to eat at any time. To freeze, flash freeze them on a cookie sheet first to make sure they don’t stick together, then store them in an airtight container or a ziplock bag.
You can also keep them in an airtight container at room temperature for about a week.

Ingredients
- 2 ripe bananas
- 2 cups old-fashioned oats
- 1 tsp cinnamon
- 1/4 tsp unrefined salt
- 1/2 cup creamy peanut butter natural
- 1/2 tsp vanilla extract
- 1/4 cup dark chocolate chips
Instructions
- Preheat the oven to 350, and line a large baking sheet with parchment paper.
- In a large mixing bowl, mash the bananas.
- Add the remaining cookie ingredients, and mix everything together really well.
- Scoop some of the cookie mixture using a spoon, and gently roll it into a ball between your palms.
- Add the cookie ball to the parchment paper lined baking sheet, and press it slightly until it form a flat cookie shape.
- Repeat with the remaining cookie "dough" until you have fit as many cookies as you can on the baking sheet. These do not expand as they cook, but give them a little space to cook evenly.
- Bake the cookies for 14-17 minutes, or until they start to turn brown on the edges.
- Remove the cookies from the oven and allow them to cool completely on a wire cooling rack.
