High Protein Cottage Cheese Pancakes
I’m always looking for ways to add protein to my meals, and I absolutely love these high protein cottage cheese pancakes. I know you will too, not only are they a healthy breakfast but they are to die for! These pancakes are fluffy on the inside, and delightfully crispy on the outside. They only take a few minutes to mix up the batter, and they store really well in the freezer for a quick weekday breakfast.

Ingredients For Cottage Cheese Pancakes
You only need seven simple ingredients for these pancakes! In fact, you probably have most of the ingredients already! Here’s what you need to make this high protein breakfast:
1 1/2 cups cottage cheese – Cottage cheese is the star of the show in this recipe! If you can find it, I love to use full-fat cottage cheese, but if you can’t find it no worries. I’ve made them with both small curd cottage cheese and large curd, and I do prefer the small curd. The texture is a little bit better.
4 whole eggs – As always, my favorite eggs to use in my home are good quality, pastured eggs. So many more nutrients!
2 Tb Honey – I prefer to use raw honey, but any honey will work.
1 cup Flour – All purpose flour or whole wheat flour work great in this recipe
1 Tsp vanilla extract
1 Tb baking powder
1/4 cup melted coconut oil (plus more for frying)

- A large glass mixing bowl (this makes a lot of batter / pancakes)
- Cast iron skillet or other non stick pan
How To Make Cottage Cheese Pancake
Step 1: Melt the coconut oil in the microwave, or on a stovetop.
Step 2: Combine all ingredients in a glass mixing bowl. Stir until everything is mixed together well. This batter is really thick, but that’s how we get nice fluffy pancakes!
Step 3: Heat a cast iron skillet or nonstick pan on medium-low heat. Once it’s hot, add some coconut oil to the pan.
Step 4: Carefully spoon the batter on to the hot pan. The batter will expand as it cooks, so add less than you think. You might need to spread it out a little bit with a spoon. I like to put 2-3 small pancakes in my pan so they can get nice and crispy!
Step 5: Cook the pancakes for 2-3 minutes, and once they are nice and crispy on the bottom, carefully flip them over. Allow them to finish cooking until they are crispy on both sides and cooked all the way through.
Step 6: Serve warm with butter and maple syrup!
Toppings & Variation Ideas
My favorite way to eat these pancakes is with butter and real maple syrup. However you could also top them with:
- fresh fruit
- homemade granola
- chocolate chips
- peanut butter
- homemade whipped cream
You could also mix fresh berries or chocolate chips into the batter for a few fun and tasty variations on these pancakes. A little cinnamon in the batter would also be delicious!
How To Store Leftover Cottage Cheese Pancakes
This recipe a good amount of batter, so you might have leftover pancakes. You can store them in the fridge in an airtight container for up to a week. For longer storage, flash freeze them on a baking sheet for 20-30 minutes and then put in an airtight container for up to 3 months.
To reheat pancakes, I recommend a toaster oven or frying pan to retain the crispiness. If you are short on time though, you can reheat in the microwave.
Tips for Success
- Make sure to add more coconut oil to the pan in between each round of pancakes
- Don’t heat your pan too hot. Medium or medium low works perfect, you will have to be a little patient while they cook but you don’t want them to burn!
- Use full fat, small curd cottage cheese (my favorite healthy cottage cheese is good culture).

Are Cottage Cheese Pancakes Gluten Free?
This recipe for cottage cheese pancakes is not gluten free, but to make gluten-free cottage cheese pancakes you could try using oat flour instead of regular flour. You can buy oat flour, or you can blend organic oats in a food processor or blender to make your own. Just an FYI – I haven’t tried this so I’m not sure on the final result.
